How to create them:

Ask the school, coach or team mom if there is clip art of the mascot that they can send you. If not, it's very easy to create your own and once created you can use it for this team/school year after year, use for the same teams in that school, unless they change their mascot logo. Then just update it.

I prefer to create a mascot brush to add to my designs. To start (if they don't have clip art to send you) when at the field, gym, wherever, look around for an image of their mascot and take a full frame RAW or highest quality JPEG of it.  Scroll down for step-bystep instructions.

As you'll see looking at my work, there's a lot a black & orange and Rams, I took 10,000s of photos, created 1000s of posters for our local high school for over 10 years. So my ram brush got used a lot and was definitely worth creating.

Remove any parts not wanted in the final, use the eraser or selection tool, whatever method you prefer Using the Magic Wand tool (Add to Selection and start with a higher tolerance and lower as needed), start selecting the areas you want included, if select too much undo.

Using the Polygonal Lasso Tool and Subtract from Select, smooth out and /or remove parts from selection Once happy fill the selection with solid black color and Invest Selection and fill with solid white color.  You can now create your new brush
Edit > Define Brush Preset

Name your new brush with a unique name or number
TIP: Backup your brushes from time to time, so you don't have to recreate.  And save the image that you created the brush from so you have 2 backups

Click on the Brush tool and your new brush should be the last one Resize the brush as needed, rotate, scale, apply a Layer Style or lower Opacity and Fill as needed
